Christmas and all that jazz are behind us, as is mid winter. The days are beginning to get longer, but the next two months can feel the coldest and the darkest. There is nothing much out there to forage either, and we fall back to our store cupboard and the greenhouse for inspiration.
We still have sunshine filled sea buckthorn, aromatic juniper and rosemary. And hopefully, that wonderful January treat – Seville oranges! Our other winter staples are Common Hogweed seed – a lovely spicy, citrussy flavour – as well as fresh ginger.
